Lettuce soup, naaah

Well, tried and discarded.

I started with a head of frisée and a handful of mixed green. Washed in cold water and blanched in very salty water. I used a big pot, a lot of water, and two handful of coarse salt. I did not want to stop the water from boiling so I proceeded by small batches, a few leaves, putting each in a bowl of iced water as they were ready.

I removed from the cold water and mixed with the blender.
When I tasted the liquid lettuce, it was very bitter. I added some raspberry vinegar, olive oil, 1 1/2 teaspoon of sugar and salt. Blended again. Tasted again.
Not bad, very smooth with a little aftertaste. I strained it through a chinois and put some ice cubes in it. Cold, it was better. My wife liked it, the color also was fantastic. I had a big glass before dinner.

Well, it is closer to a health drink than to a soup or cold potage.
Is could be good for your health. A liquid salad, maybe if I had added some bread, anchovies, an egg and grated parmesan it would have tasted like a Caesar in a glass but not for the kind of dinner I have in mind.

Back to the drawing board, or should I say the cutting board…
